Fluffy pancakes blending ripe bananas with hearty oats for a protein-rich, naturally sweet breakfast. Ready in just 25 minutes.

# What you'll need:

→ Wet Ingredients

01 - 2 large ripe bananas
02 - 2 large eggs
03 - 1/2 teaspoon vanilla extract

→ Dry Ingredients

04 - 1 cup rolled oats
05 - 1/2 teaspoon baking powder
06 - Pinch of salt
07 - 1/2 teaspoon ground cinnamon

→ For Cooking

08 - 1–2 teaspoons coconut oil or neutral oil

# Preparation steps:

01 - Combine bananas, eggs, and vanilla extract in a blender. Process until completely smooth and no lumps remain.
02 - Add oats, baking powder, salt, and cinnamon to the blender. Pulse until fully combined, allowing slight oat texture to remain for hearty consistency.
03 - Heat a non-stick skillet or griddle over medium heat. Lightly coat the surface with oil using a paper towel or brush.
04 - Pour approximately 1/4 cup batter per pancake onto the heated surface. Cook for 2–3 minutes until bubbles appear across the surface and edges appear firm.
05 - Carefully flip each pancake using a spatula. Cook an additional 1–2 minutes until golden brown and completely set in the center.
06 - Plate pancakes while warm. Top with fresh berries, Greek yogurt, or pure maple syrup as desired.

# Expert advice:

01 -
  • They come together in literally five minutes with ingredients you probably already have sitting in your pantry right now
  • The texture is somehow fluffy and satisfyingly hearty at the same time, like breakfast actually stuck with you instead of disappearing an hour later
  • Naturally sweet from the bananas so you dont feel like you need to drown them in syrup, though I wont judge if you do
02 -
  • The batter needs to rest for about 5 minutes before you start cooking otherwise the pancakes tend to spread too thin and fall apart when you try to flip them
  • Medium heat is higher than you think most people burn their first batch because they get impatient waiting for the pan to properly heat up
  • These dont bubble quite as dramatically as regular pancakes so look for set edges more than bubble activity as your flip signal
03 -
  • If your bananas arent quite ripe enough, microwave them for 30 seconds before peeling to soften them up and release more natural sweetness
  • The first pancake always cooks differently so treat it as your test pancake to check the heat level and adjust if needed
