06 - 1 small green onion, thinly sliced
07 - 0.5 teaspoon ground cumin
08 - 0.5 teaspoon chili powder
09 - 0.5 teaspoon smoked paprika
10 - Salt and black pepper to taste
11 - 2 tablespoons unsalted butter, melted

→ Garnish and Dipping

12 - 0.25 cup fresh cilantro, chopped
13 - 1 cup prepared salsa
14 - 0.5 cup sour cream
15 - 1 avocado, sliced (optional)
16 - Lime wedges (optional)

# Preparation steps:

01 - Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper.
02 - In a large bowl, combine cheddar cheese, Monterey Jack cheese, black beans, bell pepper, green onion, cumin, chili powder, smoked paprika, salt, and pepper. Mix thoroughly until well combined.
03 - Cut each tortilla in half to create 32 semicircles.
04 - Place 1 tablespoon of cheese mixture on each tortilla semicircle. Fold the straight edge over the filling to form a triangle, pressing gently to seal the edges.
05 - Arrange the quesadilla triangles on the baking sheet with points facing inward and slightly overlapping to form a tight ring in a blooming flower shape.
06 - Brush the tops of the quesadilla triangles with melted butter.
07 - Bake for 18 to 20 minutes, or until tortillas are golden brown and cheese is melted.
08 - Slide the entire blooming ring onto a serving platter and sprinkle with fresh cilantro.
09 - Place salsa, sour cream, and avocado slices in small bowls in the center of the ring. Serve immediately with lime wedges on the side.

# Expert advice:

01 -
  • It looks like you spent hours when it really takes less than half that time.
  • Everyone gets their own little quesadilla triangle, no fighting over portions.
  • You can prep the whole thing in advance and just bake it when guests arrive.
  • The center becomes a natural bowl for all your favorite dips.
02 -
  • If your tortillas are too large, the ring will not hold its shape and the triangles will flop outward.
  • Do not overload the filling or the quesadillas will burst open and leak cheese all over the pan.
  • Let the ring cool for just a minute before moving it or the cheese will still be molten and everything will slide apart.
03 -
  • Press the edges of each triangle firmly but gently so they seal without tearing the tortilla.
  • Arrange the triangles as tightly as possible so they support each other and the ring holds its shape during baking.
  • Brush butter on every visible surface for maximum golden crispiness and flavor.
